Ingredients

    Use dried oregano in the same quantity.

Method

  1. Warm oil in a saucepan and cook onion gently for 8 minutes.
  2. Add garlic and stir for 1 minute.
  3. Add tomatoes and basil. Simmer uncovered for 20–25 minutes, stirring occasionally.
  4. Taste and season. Blend if you want a smooth sauce, or leave it chunky.

Equipment

Kitchen scales, mixing bowl, spoon and the pan or tray listed in the method.

Kitchen notes

Use for pasta, pizza or vegetables. Add a small splash of water if it reduces too far.

Storage

Cool promptly and refrigerate in a covered container. Use within 2 days. These demo recipes should be kitchen-tested before publication.

Reheating

Reheat savoury cooked dishes until steaming hot throughout. Serve cakes and bread at room temperature.
