Ingredients

    Use 300 ml milk mixed with 1 tbsp lemon juice and rest for 5 minutes.

Method

  1. Heat the oven to 200°C / 180°C fan and line a baking tray.
  2. Combine flour, bicarbonate of soda and salt in a bowl. Add buttermilk gradually and mix into a soft, slightly sticky dough.
  3. Turn onto a floured surface, shape gently into a round and transfer to the tray. Cut a deep cross in the top.
  4. Bake for 35–40 minutes until well browned and the base sounds hollow when tapped. Cool on a wire rack.

Equipment

Kitchen scales, mixing bowl, spoon and the pan or tray listed in the method.

Kitchen notes

Do not knead heavily. For larger quantities, make additional loaves rather than one very large loaf.

Storage

Cool promptly and refrigerate in a covered container. Use within 2 days. These demo recipes should be kitchen-tested before publication.

Reheating

Reheat savoury cooked dishes until steaming hot throughout. Serve cakes and bread at room temperature.
